Social anthropologists explore culture and society, and generally do this by conducting ethnography. The AAI's Ethical Guidelines for the conduct of anthropological research are available here in Word format.

We have some selective examples of anthropological work on the AAI site:

Chiara Garattini works at Maynooth on Irish Infantile Funerary Practices.

Attracta Brownlee is working on Catholicism in the Irish Travelling Community.

If you want to know more about the kind of work being done in Ireland, you could look at the research done in the anthropology departments at Maynooth, and Queens, or the Sociology Department at Trinity.
